Winter warmer: 

As the nights draw in and winter descends, this beef and onion cottage pie is the perfect family meal to warm you up this season. 

  • You will need:

800g of lean beef mince
3 carrots
1/2 leek
3 garlic cloves
1 sprig of fresh thyme
2 onions, peeled and thinly sliced
3 dashes of vegetable oil
2 star anise
5 peppercorns

500gms Leeks trimmed and cut up

300 gms Potatoes peeled & diced
2 onions 
Knob of Butter
250 gms lean Smoked bacon - sliced
2 Carrots- diced
Swede/ Turnip / Parsnip to taste
A little less Salt
A Little More Pepper
A dusting of Herbs
3 tsp mustard powder or mixed
Worcester Sauce - Shake or two
STOCK - Vegetable / Chicken not Beef

Prawn Biryani - Home Made

Large Uncooked prawns ( cleaned but leave their tails on) 400gms

( if you can get them fresh or frozen ) or packet of raw prawns

Two large Potatoes in chunks uncooked 

one Onion chopped thinly

Two tablespoons of Thai Red Curry paste 

Coconout Milk 400ml 

One Red Chili finely chopped seeds removed

One tablespoon Sunflower oil 

One tablespoon fish sauce

One tablespoon lime or lemon juice

Prawn and corn chowder - Quick & Easy Cheap and Cheerful

A tin of Cream Corn 

Chicken/ Vegetable stock 

Raw Prawns 

Cooked or left over potatoes chopped into cubes

Shallots or Red Onions

Spring Onions ( for decoration)


Herbs to taste

Fry lightly the prawns and cut small onions

add cream corn and as much stock as required and potato to make a chowder

add other ingredients as preferred and reheat

serve with cut & washed spring onions
